Don't be afraid to try this unique meatloaf!
Apples give this meatloaf an unusually sweet taste and moist texture.
This recipe can be found in Millie Snyder's Lean & Luscious Mediterranean Cookbook, P 131.
1 tablespoon plus 1 teaspoon olive oil
2 small, sweet apples, peeled, chopped
½ cup chopped onions
1 pound lean ground beef
2 teaspoons curry powder
1/8 teaspoon garlic powder
Salt and pepper to taste
¾ ounce whole wheat germ
¾ cup tomato sauce
Preheat oven to 350 degrees
Heat olive oil in a small skillet over medium heat.
Add apples and onions and cook until onions are lightly browned, about 15 minutes.
In a large bowl, combine onion mixture with remaining ingredients, using only ½ cup of the tomato sauce. Mix well.
Shape mixture into a loaf. Place on a rack in a shallow baking pan. Top with remaining tomato sauce.
Bake uncovered, 1 hour.
