Peaches n’ Cream Casserole

Seriously! This Peaches ‘n Cream Casserole is absolutely perfect any time of the year. This creamy baked oatmeal fills you with the warmth you need in the cooler months and sweet juicy peaches keep it feeling light in the warmer months. Want to know the best part? No guilt!
This healthy recipe can be enjoyed for weekday breakfast, a weekend brunch, or as a dessert.
Makes 6 Servings
1 ½ cups rolled oats (4 ½ ounces)
1 ½ cups thinly sliced peaches, peeled. (Canned peaches, packed in juice, may be used.)
¼ cup sugar
2 teaspoons vanilla extract
3 cups skim milk
2 egg whites
¼ teaspoon almond extract
Preheat oven to 350 degrees.
Lightly oil an 8-inch square baking pan or spray with a nonstick cooking spray.
I used a deep round baking dish instead of a square dish for this recipe.
In a large bowl, the oats, peaches, and sugar are combined. Just toss ingredients until they are well mixed.
Using a smaller bowl, the vanilla extract, skim milk, egg whites, and almond extract are whisked together. You can use a fork to beat the ingredients, just as long as it is all well blended.
Combine both mixtures and mix well. Place your blended mixture in the prepared dish.
Bake, uncovered, 50 minutes.
Serve hot. (Leftovers are good cold or can be reheated in an oven or microwave.)
As peaches come into season, we will definitely be trying this recipe with fresh peaches. This healthy and hearty casserole quickly becomes a family favorite!
